Jamaican Steamed Cabbage

Ingredients

  • 710 g white cabbage, shredded
  • 70 g onion, chopped
  • 90 g carrot, chopped into medium strips
  • 60 g tomato, diced
  • 130 g bell pepper, chopped
  • 2 garlic cloves, finely chopped
  • 4 sprigs thyme
  • ¼ scotch bonnet pepper, seeded and finely chopped
  • 2½ tsp salt, or to taste
  • ½ tsp black pepper
  • 3 tbsp cooking oil

Steps

  1. Heat oil in a saucepan over medium-low heat.
  2. Add onion, garlic, scotch bonnet pepper, and thyme; sauté about 2 minutes.
  3. Add tomato and sauté 1-2 minutes until softened.
  4. Stir in cabbage, cover, and steam for 10 minutes.
  5. Stir in bell pepper and carrot; add salt and black pepper.
  6. Cover and steam another 10 minutes until vegetables are cooked through.
