Jamaican Steamed Cabbage

Ingredients
- 710 g white cabbage, shredded
- 70 g onion, chopped
- 90 g carrot, chopped into medium strips
- 60 g tomato, diced
- 130 g bell pepper, chopped
- 2 garlic cloves, finely chopped
- 4 sprigs thyme
- ¼ scotch bonnet pepper, seeded and finely chopped
- 2½ tsp salt, or to taste
- ½ tsp black pepper
- 3 tbsp cooking oil
Steps
- Heat oil in a saucepan over medium-low heat.
- Add onion, garlic, scotch bonnet pepper, and thyme; sauté about 2 minutes.
- Add tomato and sauté 1-2 minutes until softened.
- Stir in cabbage, cover, and steam for 10 minutes.
- Stir in bell pepper and carrot; add salt and black pepper.
- Cover and steam another 10 minutes until vegetables are cooked through.
