Cucumber Sandwiches

Ingredients
- 12 slices white bread
- 8 oz cream cheese, room temperature
- ½ tsp dried dill
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper, freshly cracked
- 2 Tbsp lemon juice
- 1 green onion, sliced
- 1 large English cucumber
Steps
- Lay bread slices on a parchment-lined baking sheet and freeze for at least 1 hour for cleaner slicing.
- In a bowl, mix cream cheese, dill, garlic powder, salt, pepper, lemon juice, and green onion until smooth and spreadable.
- Peel the cucumber if desired, then slice very thinly using a knife or mandoline (â…›-inch setting).
- Remove two slices of bread from the freezer at a time. Spread about 1.5 Tbsp cream cheese mixture edge to edge on each slice.
- Layer cucumber slices over one piece of bread, then top with the second slice, cream cheese side down.
- Slice off the crusts, then cut each sandwich into 2 or 4 pieces. Repeat with remaining bread.
- Garnish with any leftover cucumber slices and serve within 1-2 hours of assembly.
Notes
Freezing the bread beforehand makes slicing cleaner. Best served fresh within a couple hours of assembly.
