Cucumber Sandwiches

Ingredients

  • 12 slices white bread
  • 8 oz cream cheese, room temperature
  • ½ tsp dried dill
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper, freshly cracked
  • 2 Tbsp lemon juice
  • 1 green onion, sliced
  • 1 large English cucumber

Steps

  1. Lay bread slices on a parchment-lined baking sheet and freeze for at least 1 hour for cleaner slicing.
  2. In a bowl, mix cream cheese, dill, garlic powder, salt, pepper, lemon juice, and green onion until smooth and spreadable.
  3. Peel the cucumber if desired, then slice very thinly using a knife or mandoline (â…›-inch setting).
  4. Remove two slices of bread from the freezer at a time. Spread about 1.5 Tbsp cream cheese mixture edge to edge on each slice.
  5. Layer cucumber slices over one piece of bread, then top with the second slice, cream cheese side down.
  6. Slice off the crusts, then cut each sandwich into 2 or 4 pieces. Repeat with remaining bread.
  7. Garnish with any leftover cucumber slices and serve within 1-2 hours of assembly.

Notes

Freezing the bread beforehand makes slicing cleaner. Best served fresh within a couple hours of assembly.
