Vegan Black-Eyed Peas Stew

Ingredients
- 1 1/2 cups (270g) dry black-eyed peas
- 1/2 teaspoon baking soda
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 garlic cloves, minced
- 3/4-1 teaspoon oregano
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1/4-1/2 teaspoon cayenne pepper (optional)
- 1 can (15 oz/425g) tomato sauce
- 2 cups water or vegetable stock
- 2 tablespoons tomato paste
Steps
- Wash the black-eyed peas in a colander with cold water, then place in a deep bowl covered with 3-4 inches of cold water.
- Stir in the baking soda, cover, and soak for 3 hours.
- Drain and rinse the beans, then set aside.
- Heat olive oil in a large pot and sauté onions and garlic for 2-3 minutes until translucent and fragrant.
- Add tomato sauce, water, tomato paste, and spices to the pot.
- Add the soaked beans and stir well, then bring to a boil.
- Reduce heat to low, cover, and simmer for 30-40 minutes, checking liquid level occasionally.
- Taste and adjust salt if needed. Serve with crusty bread, pita, or white rice.
