Vegan Black-Eyed Peas Stew

Ingredients

  • 1 1/2 cups (270g) dry black-eyed peas
  • 1/2 teaspoon baking soda
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 3/4-1 teaspoon oregano
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/4-1/2 teaspoon cayenne pepper (optional)
  • 1 can (15 oz/425g) tomato sauce
  • 2 cups water or vegetable stock
  • 2 tablespoons tomato paste

Steps

  1. Wash the black-eyed peas in a colander with cold water, then place in a deep bowl covered with 3-4 inches of cold water.
  2. Stir in the baking soda, cover, and soak for 3 hours.
  3. Drain and rinse the beans, then set aside.
  4. Heat olive oil in a large pot and sauté onions and garlic for 2-3 minutes until translucent and fragrant.
  5. Add tomato sauce, water, tomato paste, and spices to the pot.
  6. Add the soaked beans and stir well, then bring to a boil.
  7. Reduce heat to low, cover, and simmer for 30-40 minutes, checking liquid level occasionally.
  8. Taste and adjust salt if needed. Serve with crusty bread, pita, or white rice.
