🇯🇲 Jamaica

Servings: 2 Prep: 5 minutes Cook: 15 minutes Total: 20 minutes

Ingredients

  • 4 green bananas
  • 1/2 lb yellow yam
  • 1/2 lb pumpkin
  • 1/4 lb coco (eddo)
  • 1 tsp salt
  • 1 tbsp coconut oil
  • Water
  • 1 1/2 cups plain flour
  • 1/8 tsp salt (optional)
  • Water

Steps

  1. Peel and cut the green bananas, yellow yam, pumpkin, and coco into chunks.
  2. In a bowl, mix flour with a pinch of salt and enough water to form a firm dough; shape into small dumplings.
  3. Bring a large pot of water to a boil with salt and coconut oil.
  4. Add the yam, coco, and pumpkin first, since they take longer to cook.
  5. After a few minutes, add the green bananas and dumplings to the pot.
  6. Boil everything together until all the vegetables and dumplings are tender.
  7. Drain and serve hot, often alongside fish or other main dishes.
