Baked Feta Pasta

Ingredients
- 2 pints (630g) cherry or grape tomatoes
- 1 teaspoon dried oregano, plus a pinch more
- Salt and pepper, to taste
- 1/4 cup olive oil, divided
- 3 large garlic cloves, minced
- 1 (8 oz) block feta cheese
- 1 cup fresh basil leaves, chopped
- 8 oz dry pasta
Steps
- Preheat oven to 400°F (200°C).
- In a 13x9 baking dish, combine tomatoes, 3 tablespoons olive oil, oregano, garlic, salt, and pepper. Toss to coat.
- Place the block of feta in the center of the dish. Drizzle with the remaining tablespoon of olive oil and a pinch of oregano.
- Bake for 20 minutes, then increase oven temperature to 450°F (230°C) and bake for another 10 minutes.
- Meanwhile, cook pasta al dente according to package directions. Reserve 1 cup of the pasta cooking water.
- Remove the baking dish from the oven and mash the tomatoes and feta together until well combined.
- Add the chopped basil and cooked pasta, and mix well.
- If the sauce needs thinning, add reserved pasta water and mix until smooth.
- Serve in bowls, topped with extra basil if desired.
