Baked Feta Pasta

Ingredients

  • 2 pints (630g) cherry or grape tomatoes
  • 1 teaspoon dried oregano, plus a pinch more
  • Salt and pepper, to taste
  • 1/4 cup olive oil, divided
  • 3 large garlic cloves, minced
  • 1 (8 oz) block feta cheese
  • 1 cup fresh basil leaves, chopped
  • 8 oz dry pasta

Steps

  1. Preheat oven to 400°F (200°C).
  2. In a 13x9 baking dish, combine tomatoes, 3 tablespoons olive oil, oregano, garlic, salt, and pepper. Toss to coat.
  3. Place the block of feta in the center of the dish. Drizzle with the remaining tablespoon of olive oil and a pinch of oregano.
  4. Bake for 20 minutes, then increase oven temperature to 450°F (230°C) and bake for another 10 minutes.
  5. Meanwhile, cook pasta al dente according to package directions. Reserve 1 cup of the pasta cooking water.
  6. Remove the baking dish from the oven and mash the tomatoes and feta together until well combined.
  7. Add the chopped basil and cooked pasta, and mix well.
  8. If the sauce needs thinning, add reserved pasta water and mix until smooth.
  9. Serve in bowls, topped with extra basil if desired.
