Jamaican Coconut Rice

Ingredients

  • 1 lb basmati rice
  • 1 cup coconut milk
  • ½ cup water
  • 1 stalk scallion
  • ½ tsp salt, or to taste

Steps

  1. In a pot over medium heat, combine coconut milk, salt, and scallion; bring to a boil.
  2. Wash the rice and add it to the pot, stirring well.
  3. Add boiling water to cover the rice.
  4. Cover the pot and bring to a boil again, then reduce heat to low.
  5. Cook until all the liquid has evaporated.
  6. Turn off the heat and let the rice rest for about 5 minutes before serving.
