Jamaican Coconut Rice

Ingredients
- 1 lb basmati rice
- 1 cup coconut milk
- ½ cup water
- 1 stalk scallion
- ½ tsp salt, or to taste
Steps
- In a pot over medium heat, combine coconut milk, salt, and scallion; bring to a boil.
- Wash the rice and add it to the pot, stirring well.
- Add boiling water to cover the rice.
- Cover the pot and bring to a boil again, then reduce heat to low.
- Cook until all the liquid has evaporated.
- Turn off the heat and let the rice rest for about 5 minutes before serving.
