Jamaican Brown Stew Chicken

Ingredients

  • 771 g chicken
  • 1 small yellow onion, chopped
  • 2 stalks scallion, chopped
  • 2 garlic cloves, crushed
  • 1/4 green bell pepper, sliced
  • 1/4 red bell pepper, sliced
  • 1 small tomato, diced
  • 1/4 scotch bonnet pepper, seeds removed, finely chopped
  • 4 g grated ginger
  • 4 sprigs thyme
  • 5 pimento berries (allspice)
  • 1 1/2 tbsp all-purpose or chicken seasoning, salt-free
  • 1 1/2 tsp salt
  • 1 tsp browning sauce
  • 2 tbsp ketchup (optional)
  • 1 chicken bouillon cube
  • 3-4 tbsp cooking oil
  • 355 ml water

Steps

  1. Clean the chicken by washing it with water, vinegar, and lime or lemon juice, then drain, dry, and chop into small pieces.
  2. Season the chicken with the all-purpose seasoning, 1/2 tsp salt, and browning sauce. Add onion, garlic, scallion, scotch bonnet, thyme, pimento berries, and ginger, rubbing everything into the chicken. Let marinate at least 1 hour.
  3. Separate the onion, thyme, scallion, garlic, and pimento pieces from the chicken as best as possible.
  4. Heat oil in a large pot over medium heat. Add the chicken and brown on all sides, adjusting heat as needed so it cooks through.
  5. Pour off excess oil, leaving about 1 tablespoon in the pot.
  6. Add the water, reserved onion, scallion, garlic, thyme, pimento, scotch bonnet, bell peppers, tomato, remaining salt, bouillon cube, and ketchup if using. Cover and bring to a boil, tasting and adjusting seasoning as needed.
  7. Simmer uncovered for about 10 minutes, then add the browned chicken.
  8. Reduce heat to low, cover, and simmer for another 10 minutes until chicken is cooked through.

Notes

Salt-free all-purpose seasoning or a homemade green seasoning blend can be used in place of individually adding onion, garlic, scallion, thyme, and pimento to the marinade.
