Tiramisu Truffles

Ingredients

  • 24 ladyfinger (Savoiardi) biscuits
  • 8.8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla extract
  • 1/4 cup espresso or strong coffee
  • Cocoa powder, for rolling and dusting
  • 4 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract

Steps

  1. Crush the ladyfinger cookies into a fine powder using a food processor or by crushing them in a sealed bag.
  2. Transfer the crumbs to a bowl and mix in the mascarpone cheese and 2 tablespoons of the coffee.
  3. Gradually add more coffee, mixing, until the dough is soft but holds together (about 3 1/2 tablespoons total).
  4. Scoop the mixture into small balls using a cookie scoop.
  5. Roll each ball in cocoa powder until fully coated.
  6. Place the truffles on a serving platter and refrigerate while preparing the dip.
  7. For the dip, whip the heavy cream with the mascarpone cheese, powdered sugar, and vanilla extract until soft peaks form.
  8. Serve the chilled truffles alongside the mascarpone dip, dusted with extra cocoa powder if desired.
