Jamaican Curry Chicken Feet

Ingredients
- 1 ½ lb chicken feet
- 1 ½ tbsp curry powder
- 1 tsp chicken seasoning
- 1 tbsp chicken stock powder
- 4 cloves garlic
- 1 large onion
- 1 sprig thyme
- 2 stalks scallion
- ½ Scotch bonnet pepper
- 6 pimento berries (allspice)
- 1 tsp ginger
- 1 medium carrot
- 1 small potato
- 1 ½ tsp salt
- 4 tbsp coconut oil
- 6 cups water
Steps
- Clean the chicken feet thoroughly, removing the outer skin and nails.
- Season the chicken feet with garlic, ginger, chicken seasoning, salt, and half of the curry powder; let marinate.
- Heat coconut oil in a pot and add the remaining curry powder, stirring until fragrant.
- Add the seasoned chicken feet to the pot and stir to coat evenly with the curry oil.
- Add onion, scallion, thyme, pimento berries, and Scotch bonnet pepper.
- Pour in the water and chicken stock, then bring to a boil.
- Reduce heat and simmer until the chicken feet are tender.
- Add carrot and potato, and continue cooking until the vegetables are soft and the sauce thickens.
- Adjust seasoning to taste and serve hot.
Notes
Chicken seasoning, chicken stock, and water amounts can be adjusted to taste and desired sauce consistency.
