Jamaican Curry Chicken Feet

Ingredients

  • 1 ½ lb chicken feet
  • 1 ½ tbsp curry powder
  • 1 tsp chicken seasoning
  • 1 tbsp chicken stock powder
  • 4 cloves garlic
  • 1 large onion
  • 1 sprig thyme
  • 2 stalks scallion
  • ½ Scotch bonnet pepper
  • 6 pimento berries (allspice)
  • 1 tsp ginger
  • 1 medium carrot
  • 1 small potato
  • 1 ½ tsp salt
  • 4 tbsp coconut oil
  • 6 cups water

Steps

  1. Clean the chicken feet thoroughly, removing the outer skin and nails.
  2. Season the chicken feet with garlic, ginger, chicken seasoning, salt, and half of the curry powder; let marinate.
  3. Heat coconut oil in a pot and add the remaining curry powder, stirring until fragrant.
  4. Add the seasoned chicken feet to the pot and stir to coat evenly with the curry oil.
  5. Add onion, scallion, thyme, pimento berries, and Scotch bonnet pepper.
  6. Pour in the water and chicken stock, then bring to a boil.
  7. Reduce heat and simmer until the chicken feet are tender.
  8. Add carrot and potato, and continue cooking until the vegetables are soft and the sauce thickens.
  9. Adjust seasoning to taste and serve hot.

Notes

Chicken seasoning, chicken stock, and water amounts can be adjusted to taste and desired sauce consistency.
