Spanakopita Triangles

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 large garlic clove, minced
  • 10 ounces frozen spinach, thawed, drained, and squeezed dry
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 cup crumbled feta cheese
  • Salt and black pepper, to taste
  • 6 tablespoons unsalted butter, melted
  • 16 sheets phyllo dough (about 1/2 pound), thawed

Steps

  1. Heat olive oil in a pan over medium heat and sauté the onion until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in the spinach, cilantro, and dill, and cook for a few minutes until any excess moisture evaporates.
  4. Remove from heat and let cool slightly, then mix in the crumbled feta cheese. Season with salt and pepper.
  5. Lay out a sheet of phyllo dough and brush with melted butter.
  6. Cut the phyllo sheet lengthwise into strips.
  7. Place a spoonful of the spinach filling at one end of each strip.
  8. Fold the phyllo over the filling in a triangular shape, continuing to fold to the end of the strip like folding a flag.
  9. Repeat with remaining phyllo and filling, brushing each triangle with butter.
  10. Arrange the triangles on a baking sheet and bake at 375°F (190°C) until golden and crisp, about 15 minutes.
