Spanakopita Triangles

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 large garlic clove, minced
- 10 ounces frozen spinach, thawed, drained, and squeezed dry
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh dill, chopped
- 1 cup crumbled feta cheese
- Salt and black pepper, to taste
- 6 tablespoons unsalted butter, melted
- 16 sheets phyllo dough (about 1/2 pound), thawed
Steps
- Heat olive oil in a pan over medium heat and sauté the onion until soft.
- Add garlic and cook for 1 minute until fragrant.
- Stir in the spinach, cilantro, and dill, and cook for a few minutes until any excess moisture evaporates.
- Remove from heat and let cool slightly, then mix in the crumbled feta cheese. Season with salt and pepper.
- Lay out a sheet of phyllo dough and brush with melted butter.
- Cut the phyllo sheet lengthwise into strips.
- Place a spoonful of the spinach filling at one end of each strip.
- Fold the phyllo over the filling in a triangular shape, continuing to fold to the end of the strip like folding a flag.
- Repeat with remaining phyllo and filling, brushing each triangle with butter.
- Arrange the triangles on a baking sheet and bake at 375°F (190°C) until golden and crisp, about 15 minutes.
