Spanakopita Triangles

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 large garlic clove, minced
- 10 ounces frozen spinach, thawed, drained, and squeezed dry
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh dill, chopped
- 1 cup crumbled feta cheese
- Salt and black pepper, to taste
- 6 tablespoons unsalted butter, melted
- 16 sheets phyllo dough (about 1/2 pound), thawed
Steps
- Heat olive oil in a skillet over medium heat and cook onion until soft.
- Add garlic and cook for 1 minute until fragrant.
- Stir in spinach, cilantro, and dill, and cook for a few minutes until any excess moisture evaporates.
- Remove from heat and let cool slightly, then mix in feta cheese, salt, and pepper.
- Preheat oven to 375°F (190°C).
- Lay out a sheet of phyllo dough and brush lightly with melted butter.
- Cut the phyllo sheet lengthwise into strips.
- Place a spoonful of spinach filling at one end of a strip.
- Fold the phyllo over the filling in a triangle shape, continuing to fold along the strip to the end, like folding a flag.
- Place the folded triangle on a baking sheet and brush the top with melted butter.
- Repeat with remaining phyllo and filling.
- Bake for 12-15 minutes until golden brown and crisp.
- Let cool slightly before serving.
