Spanakopita Triangles

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 large garlic clove, minced
  • 10 ounces frozen spinach, thawed, drained, and squeezed dry
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 cup crumbled feta cheese
  • Salt and black pepper, to taste
  • 6 tablespoons unsalted butter, melted
  • 16 sheets phyllo dough (about 1/2 pound), thawed

Steps

  1. Heat olive oil in a skillet over medium heat and cook onion until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in spinach, cilantro, and dill, and cook for a few minutes until any excess moisture evaporates.
  4. Remove from heat and let cool slightly, then mix in feta cheese, salt, and pepper.
  5. Preheat oven to 375°F (190°C).
  6. Lay out a sheet of phyllo dough and brush lightly with melted butter.
  7. Cut the phyllo sheet lengthwise into strips.
  8. Place a spoonful of spinach filling at one end of a strip.
  9. Fold the phyllo over the filling in a triangle shape, continuing to fold along the strip to the end, like folding a flag.
  10. Place the folded triangle on a baking sheet and brush the top with melted butter.
  11. Repeat with remaining phyllo and filling.
  12. Bake for 12-15 minutes until golden brown and crisp.
  13. Let cool slightly before serving.
