Jamaican Easter Bun

Ingredients
- 4 cups all-purpose flour
- â…” tbsp baking powder
- 1 tsp cinnamon powder
- 1 tsp grated nutmeg
- 2 tsp mixed spice (optional)
- 1 tsp salt
- 1 tsp ground ginger
- ¾ cup brown sugar
- ½ cup black raisins
- ½ cup mixed fruit
- ¼ cup glace cherries
- 400 ml Malta drink
- 1 tbsp vanilla extract
- 2 tbsp butter
- 1½ tbsp jam
- 2 tbsp honey
- 2½ tbsp molasses
- 3 tbsp vegetable oil
- ½ tbsp butter (for glaze)
- 1 tbsp honey (for glaze)
Steps
- In a small pot over medium heat, combine the Malta drink, molasses, honey, oil, butter, jam, brown sugar, raisins, mixed fruit, and cherries. Heat until the butter melts and the sugar dissolves.
- In a mixing bowl, combine the flour, mixed spice, cinnamon, nutmeg, salt, ground ginger, and baking powder. Set aside.
- Preheat the oven to 350°F (180°C).
- Let the warm liquid mixture cool slightly, then gradually stir in the dry ingredients until combined.
- Pour the batter into a greased loaf pan. Sprinkle extra mixed fruit and cherries on top.
- Bake for 1 hour and 15 minutes.
- Near the end of baking, melt the butter and honey together over medium heat to make a glaze.
- Remove the bun from the oven and brush the glaze over the top while warm.
Notes
Traditionally served sliced with Jamaican cheese (often processed cheddar) alongside.
