Easy Creamy Coleslaw

Ingredients

  • â…” cup mayonnaise
  • 1 Tbsp honey
  • 2 tsp Dijon mustard
  • 2 tsp red wine vinegar
  • ½ tsp salt
  • ¼ tsp black pepper, freshly cracked
  • ½ head green cabbage, about 12 oz
  • 1 large carrot, about 4 oz
  • 6 green onions, sliced

Steps

  1. Finely shred the cabbage and carrot, and slice the green onions, keeping the pieces thin and even.
  2. In a small bowl, whisk together the mayonnaise, honey, Dijon mustard, red wine vinegar, salt, and pepper.
  3. Combine the shredded cabbage, carrot, and green onions in a large bowl.
  4. Pour the dressing over the vegetables and stir until evenly coated.
  5. Serve immediately, or cover and chill until ready to serve.
