Shawarma Crispy Rice Salad

Ingredients
- 2 cups cooked leftover rice
- 1 tablespoon olive oil
- 1 tablespoon shawarma spice mix
- 1 pound ground beef
- 1 1/2 tablespoons shawarma spice mix
- 1/2 teaspoon garlic powder (optional)
- 1 tablespoon white vinegar
- 3/4 teaspoon salt, or to taste
- 4-5 Persian cucumbers, sliced
- 1/2 red onion, sliced
- 1-2 tablespoons diced pickled jalapeño (optional)
- 1 cup grape tomatoes, halved
- 1 cup plain yogurt (Greek or regular)
- 1/2 cup mayonnaise
- 1-2 large garlic cloves, minced
- Juice of 1/2 lime
- Salt and pepper, to taste
Steps
- Heat olive oil in a skillet and fry the cooked rice with 1 tablespoon shawarma spice mix until crispy.
- In a separate pan, cook the ground beef with the remaining shawarma spice mix, garlic powder, and vinegar until browned; season with salt.
- Make the sauce by whisking together yogurt, mayonnaise, minced garlic, lime juice, salt, and pepper.
- Assemble the salad by layering the crispy rice, cooked beef, cucumbers, red onion, pickled jalapeño, and tomatoes.
- Drizzle the yogurt sauce over the salad and serve.
