Shawarma Crispy Rice Salad

Ingredients

  • 2 cups cooked leftover rice
  • 1 tablespoon olive oil
  • 1 tablespoon shawarma spice mix
  • 1 pound ground beef
  • 1 1/2 tablespoons shawarma spice mix
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon white vinegar
  • 3/4 teaspoon salt, or to taste
  • 4-5 Persian cucumbers, sliced
  • 1/2 red onion, sliced
  • 1-2 tablespoons diced pickled jalapeño (optional)
  • 1 cup grape tomatoes, halved
  • 1 cup plain yogurt (Greek or regular)
  • 1/2 cup mayonnaise
  • 1-2 large garlic cloves, minced
  • Juice of 1/2 lime
  • Salt and pepper, to taste

Steps

  1. Heat olive oil in a large skillet over medium-high heat and add the cooked rice.
  2. Sprinkle 1 tablespoon shawarma spice mix over the rice and cook, stirring occasionally, until the rice is crispy and golden. Set aside.
  3. In the same skillet, cook the ground beef over medium-high heat, breaking it apart, until browned.
  4. Add the 1 1/2 tablespoons shawarma spice mix, garlic powder, vinegar, and salt to the beef and cook until fully combined and cooked through.
  5. In a small bowl, whisk together the yogurt, mayonnaise, minced garlic, lime juice, and salt and pepper to make the sauce.
  6. In a large bowl or platter, combine the crispy rice, shawarma beef, cucumbers, red onion, pickled jalapeño, and grape tomatoes.
  7. Drizzle the yogurt sauce over the salad and serve immediately.
