Homemade Vegetable Broth

Ingredients
- 2 tbsp extra virgin olive oil
- 1 large onion, cut into 1-inch pieces
- 3 carrots, cut into 1-inch pieces
- 3 stalks celery, cut into 1-inch pieces
- 6 button mushrooms, halved
- 2 cups fresh spinach
- 3 bay leaves
- 1 handful fresh parsley
- 1 tsp dried thyme
- 1 tsp black peppercorns
- 1 tsp sea salt
- 8 cups cold water
Steps
- Cut the onion, carrots, celery, and mushrooms into 1-inch pieces (halve the mushrooms).
- Heat olive oil in a large stock pot over medium-high heat, add all the cut vegetables along with the spinach, parsley, bay leaves, thyme, peppercorns, and salt.
- Cook, stirring occasionally, for 8-10 minutes until the onions turn translucent.
- Add the cold water and bring to a boil.
- Cover with a lid, reduce heat to low-medium, and simmer for 35 minutes.
- Turn off the heat and let the broth sit for 5 minutes.
- Strain the broth through a fine sieve or cheesecloth into a pitcher.
- Store in the fridge for up to 7 days, or freeze for later use.
