Crispy Spanish Ham Croquettes (Croquetas de Jamón)

Ingredients
- 2 tbsp extra virgin olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, roughly chopped
- 1/4 cup all purpose flour
- 1 cup low fat milk
- 3.5 oz Spanish ham (Jamón Ibérico), finely chopped
- dash of nutmeg
- salt and black pepper
- 1/2 cup all purpose flour
- 1 large egg
- 1 tbsp milk
- 1 cup plain breadcrumbs
- salt and black pepper
- 1 cup virgin olive oil, for frying
- fresh parsley, for garnish
Steps
- Heat olive oil in a medium fry pan over medium heat.
- Add chopped onion and garlic, cook 2-3 minutes until onions are slightly translucent.
- Add 1/4 cup flour and mix for 2 minutes.
- Slowly add milk while stirring continuously until a thick paste forms.
- Turn off heat; stir in chopped ham, nutmeg, salt, and pepper until well combined.
- Transfer mixture to a bowl, cover, and freeze for at least 30 minutes.
- Set up a breading station: flour in one bowl, whisked egg with milk, salt, and pepper in another, and breadcrumbs in a third.
- Shape chilled mixture into small cylinders about the size of a large egg.
- Coat each croquette in flour, then egg wash, then breadcrumbs, ensuring even coverage.
- Heat virgin olive oil in a fry pan over medium heat until hot but not smoking.
- Fry croquettes in batches, about 3 minutes per side, until golden and crispy.
- Drain on paper towels.
- Serve hot or warm, garnished with fresh parsley.
