Jamaican Plantain Fritters

Ingredients

  • 1 very ripe plantain
  • 60 g plain flour
  • 2 tbsp sugar
  • ¾ tsp vanilla extract
  • ¼ tsp nutmeg
  • â…› tsp ground cinnamon
  • pinch of salt
  • 60 ml water
  • cooking oil, for frying

Steps

  1. Peel the plantain, slice it into a bowl, and mash with a fork or masher.
  2. Add remaining ingredients, except the oil, and mix into a soft batter, similar to pancake batter but thicker.
  3. Heat oil in a frying pan over medium heat, enough to shallow fry without fully covering the fritters.
  4. Scoop tablespoon-sized portions of batter into the hot oil.
  5. Fry until golden brown on both sides and cooked through.
