Jamaican Plantain Fritters

Ingredients
- 1 very ripe plantain
- 60 g plain flour
- 2 tbsp sugar
- ¾ tsp vanilla extract
- ¼ tsp nutmeg
- â…› tsp ground cinnamon
- pinch of salt
- 60 ml water
- cooking oil, for frying
Steps
- Peel the plantain, slice it into a bowl, and mash with a fork or masher.
- Add remaining ingredients, except the oil, and mix into a soft batter, similar to pancake batter but thicker.
- Heat oil in a frying pan over medium heat, enough to shallow fry without fully covering the fritters.
- Scoop tablespoon-sized portions of batter into the hot oil.
- Fry until golden brown on both sides and cooked through.
