Grilled Cabbage

Ingredients

  • 1 head cabbage, cut into 6 wedges
  • 1 garlic clove, minced
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper, freshly cracked
  • 1 tsp chili flakes
  • 2 tbsp Parmesan, grated

Steps

  1. Peel away and discard the outermost layers of the cabbage.
  2. Cut the cabbage in half, then into 2-inch wedges, keeping the stem intact so each wedge holds together. Trim the bottom of the stem clean.
  3. Whisk together olive oil, minced garlic, sea salt, black pepper, chili flakes, and grated Parmesan in a small bowl.
  4. Brush the mixture over all sides of each cabbage wedge.
  5. Grill on a 400°F grill for 5-6 minutes per side, without moving, until charred.
  6. Drizzle with balsamic glaze, top with extra Parmesan and minced parsley if desired, then serve.

Notes

Balsamic glaze and parsley garnish are optional.
