Grilled Cabbage

Ingredients
- 1 head cabbage, cut into 6 wedges
- 1 garlic clove, minced
- 3 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper, freshly cracked
- 1 tsp chili flakes
- 2 tbsp Parmesan, grated
Steps
- Peel away and discard the outermost layers of the cabbage.
- Cut the cabbage in half, then into 2-inch wedges, keeping the stem intact so each wedge holds together. Trim the bottom of the stem clean.
- Whisk together olive oil, minced garlic, sea salt, black pepper, chili flakes, and grated Parmesan in a small bowl.
- Brush the mixture over all sides of each cabbage wedge.
- Grill on a 400°F grill for 5-6 minutes per side, without moving, until charred.
- Drizzle with balsamic glaze, top with extra Parmesan and minced parsley if desired, then serve.
Notes
Balsamic glaze and parsley garnish are optional.
