Mediterranean White Bean Salad

Ingredients
- 3 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, finely grated
- 1 tsp dried oregano
- 25 oz white beans, drained and rinsed
- 1 small red onion, finely chopped
- 1/2 English cucumber, finely diced
- 1 red bell pepper, finely chopped
- 1/3 cup sliced black olives
- 4 oz small fresh mozzarella balls, halved
- 12 fresh basil leaves, finely chopped
- sea salt & black pepper, to taste
Steps
- In a bowl, whisk together olive oil, white wine vinegar, Dijon mustard, grated garlic, and oregano; season with salt and pepper. Set aside.
- Drain and rinse the white beans, shake off excess water, and place in a large bowl.
- Add the red onion, cucumber, red bell pepper, black olives, mozzarella, and basil to the beans.
- Pour the dressing over the salad, season with salt and pepper, and gently toss to combine.
- Serve at room temperature or chilled. Keeps in the fridge for 3 to 4 days.
