Homemade Doner Kebab

Ingredients

  • 2 lbs ground beef (80/20)
  • 1 large onion, quartered (about 300g)
  • 5 large garlic cloves
  • 3 tablespoons plain yogurt
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cinnamon
  • 2 tablespoons olive oil, plus more for hands
  • 2 Roma tomatoes
  • Assorted bell peppers
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 8 flatbreads (preferably Lebanese or Lavash)
  • Hummus, for serving
  • Tzatziki (yogurt dill sauce), for serving
  • Toum, for serving
  • 1 red onion, thinly sliced
  • 1/2 cup chopped parsley
  • 2 teaspoons sumac
  • 1/4 teaspoon salt
  • 1 teaspoon olive oil
  • A squeeze of fresh lemon juice

Steps

  1. Cut 5 sheets of parchment paper, about 16x12 inches each, and set aside.
  2. In a food processor, puree the onion and garlic together.
  3. Add the ground beef, yogurt, and all spices (except the olive oil) to the processor. Pulse until the mixture is light in color and forms a paste.
  4. Transfer the meat mixture to a large bowl, drizzle with olive oil, and mix with your hands until well combined.
  5. Preheat the oven to 400°F.
  6. Divide the meat mixture into 4 equal parts. Lightly oil one sheet of parchment paper.
  7. Place another sheet of parchment paper on your work surface. Wet your hands with oil and press a quarter of the meat mixture onto the paper.
  8. Cover the meat with the oiled parchment sheet, oiled side down, and roll it out thin with a rolling pin.
  9. Remove the top parchment sheet, then roll up the meat mixture, keeping the bottom parchment paper attached.
  10. Place the roll on a baking sheet and repeat with the remaining meat to form 4 rolls total.
  11. If using, arrange the tomatoes and peppers on the tray, drizzle with olive oil, and season with salt and pepper.
  12. Bake for 25-30 minutes, until the meat rolls are cooked through.
  13. Meanwhile, make the Turkish onion sumac salad: toss the sliced red onion, parsley, sumac, salt, olive oil, and a squeeze of lemon juice together in a bowl.
  14. Slice the baked meat rolls thinly and serve in flatbread with hummus, tzatziki, toum, and the sumac onion salad.
