Homemade Doner Kebab

Ingredients
- 2 lbs ground beef (80/20)
- 1 large onion, quartered
- 5 garlic cloves
- 3 tablespoons plain yogurt
- 2 teaspoons salt
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon cinnamon
- 2 tablespoons olive oil
- 2 Roma tomatoes
- Assorted peppers
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 8 flatbreads (Lebanese or Lavash)
- Hummus
- Tzatziki (yogurt dill sauce)
- Toum (garlic sauce)
- 1 red onion, thinly sliced
- 1/2 cup chopped parsley
- 2 teaspoons sumac
- 1/4 teaspoon salt
- 1 teaspoon olive oil
- A squeeze of fresh lemon
Steps
- Preheat oven to 400°F (200°C).
- Cut 5 sheets of parchment paper (16x12 inches) and set aside.
- In a food processor, puree the onion and garlic.
- Add ground beef, yogurt, and all spices (not the olive oil); pulse until the mixture is pale and forms a paste.
- Transfer the meat mixture to a large bowl, drizzle in olive oil, and mix by hand until well combined.
- Divide the mixture into 4 equal portions.
- Oil one sheet of parchment paper and place another sheet on your work surface.
- Spread one portion of the meat mixture onto the parchment, pressing lightly with oiled hands.
- Cover with the oiled parchment sheet (oiled side down) and roll with a rolling pin until thin.
- Remove the top parchment sheet, then roll up the meat mixture, keeping the bottom parchment attached.
- Repeat with the remaining portions to form 4 meat rolls; place them on a baking sheet.
- Place tomatoes and assorted peppers on the same tray, drizzle with olive oil, and season with salt and pepper.
- Bake for 25-30 minutes until the meat rolls are cooked through.
- Meanwhile, prepare the sumac salad: toss sliced red onion, parsley, sumac, salt, olive oil, and a squeeze of lemon juice together.
- Remove the meat rolls from the oven, let rest briefly, then slice thinly.
- Assemble sandwiches: spread hummus, tzatziki, and toum on flatbread, then top with sliced meat, roasted vegetables, and sumac onion salad.
- Wrap and serve immediately.
