Sardine Sandwich (Bocadillo de Sardinas)

Ingredients
- 2 cans sardines in olive oil (4 oz / 120 g each)
- 1 large onion, thinly sliced
- 1 large green bell pepper, thinly sliced
- 4 cloves garlic, thinly sliced
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 2 cloves garlic, finely grated
- 1 tsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tomato, finely grated
- 1 baguette
- Sea salt and black pepper, to taste
- Chopped parsley, for garnish
Steps
- Drain the sardines over a bowl, reserving the oil.
- Heat a large pan over medium heat and add the reserved sardine oil.
- Add the sliced onion, bell pepper, and garlic; sauté, stirring every 1-2 minutes, for 7-8 minutes until lightly softened.
- Season the vegetables with salt and pepper, mix, then remove from heat.
- In a bowl, whisk together mayonnaise, Dijon mustard, grated garlic, lemon juice, and olive oil; season with salt and pepper.
- Cut the baguette into 3-inch (8 cm) pieces, then slice each piece in half lengthwise.
- Spread the mayo aioli on the bottom and top of each baguette piece.
- Top the bottom slice with grated tomato, sautéed vegetables, and two sardines.
- Garnish with chopped parsley and serve.
