Sardine Sandwich (Bocadillo de Sardinas)

Ingredients

  • 2 cans sardines in olive oil (4 oz / 120 g each)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 2 cloves garlic, finely grated
  • 1 tsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tomato, finely grated
  • 1 baguette
  • Sea salt and black pepper, to taste
  • Chopped parsley, for garnish

Steps

  1. Drain the sardines over a bowl, reserving the oil.
  2. Heat a large pan over medium heat and add the reserved sardine oil.
  3. Add the sliced onion, bell pepper, and garlic; sauté, stirring every 1-2 minutes, for 7-8 minutes until lightly softened.
  4. Season the vegetables with salt and pepper, mix, then remove from heat.
  5. In a bowl, whisk together mayonnaise, Dijon mustard, grated garlic, lemon juice, and olive oil; season with salt and pepper.
  6. Cut the baguette into 3-inch (8 cm) pieces, then slice each piece in half lengthwise.
  7. Spread the mayo aioli on the bottom and top of each baguette piece.
  8. Top the bottom slice with grated tomato, sautéed vegetables, and two sardines.
  9. Garnish with chopped parsley and serve.
