Ricotta Cheese Pasta

Ingredients

  • 1/2 pound dry pasta
  • 2 tablespoons olive oil
  • 2 large garlic cloves, minced
  • 8 oz baby spinach leaves
  • 1 cup reserved pasta cooking water
  • 1 cup ricotta cheese
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste
  • Parmesan cheese, for garnish

Steps

  1. Cook pasta in salted boiling water until al dente, according to package directions. Reserve 1 cup of pasta water before draining.
  2. In a food processor, blend the ricotta cheese with 1/2 cup of reserved pasta water until smooth.
  3. In a large skillet, sauté garlic in olive oil over medium heat for 30 seconds.
  4. Add spinach and cook until wilted.
  5. Pour the ricotta mixture into the skillet and season with salt and pepper.
  6. Stir in lemon juice and half of the lemon zest.
  7. Taste and adjust seasoning, then add the cooked pasta and toss to combine.
  8. Serve in bowls, garnished with remaining lemon zest and Parmesan cheese.
