Ricotta Cheese Pasta

Ingredients
- 1/2 pound dry pasta
- 2 tablespoons olive oil
- 2 large garlic cloves, minced
- 8 oz baby spinach leaves
- 1 cup reserved pasta cooking water
- 1 cup ricotta cheese
- Juice and zest of 1 lemon
- Salt and pepper, to taste
- Parmesan cheese, for garnish
Steps
- Cook pasta in salted boiling water until al dente, according to package directions. Reserve 1 cup of pasta water before draining.
- In a food processor, blend the ricotta cheese with 1/2 cup of reserved pasta water until smooth.
- In a large skillet, sauté garlic in olive oil over medium heat for 30 seconds.
- Add spinach and cook until wilted.
- Pour the ricotta mixture into the skillet and season with salt and pepper.
- Stir in lemon juice and half of the lemon zest.
- Taste and adjust seasoning, then add the cooked pasta and toss to combine.
- Serve in bowls, garnished with remaining lemon zest and Parmesan cheese.
