Tabouli Salad

Ingredients

  • 1/2 cup fine bulgur wheat (about 70g)
  • 1/2 to 3/4 cup fresh lemon juice
  • 2 tablespoons dried mint
  • 3-4 Roma tomatoes, firm, finely diced
  • 5 green onions, cleaned and sliced (white and green parts)
  • 3 bunches fresh flat-leaf parsley (about 330g), finely chopped
  • 1/2 cup olive oil
  • 1 1/2 teaspoons salt, or to taste

Steps

  1. Rinse bulgur wheat thoroughly without soaking; drain well and place in a deep bowl.
  2. Add the lemon juice and dried mint to the bulgur, mixing well, and let it sit to soften.
  3. Layer the diced tomatoes, sliced green onions, and chopped parsley on top of the bulgur.
  4. Just before serving, drizzle with olive oil, add salt, and toss everything together well.

Notes

For best flavor and texture, let the salad rest before serving rather than serving immediately.
