Classic French Cherry Clafoutis

Ingredients
- 1 tbsp butter, for greasing
- 1 1/4 cups milk
- 2/3 cup granulated sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 1 tbsp kirsch (optional)
- 1/2 tsp kosher salt
- 1/2 cup all-purpose flour
- 3 cups cherries, pitted or unpitted
- Powdered sugar, for serving
Steps
- Preheat oven to 350°F (175°C). Generously butter an 8-9 inch pie dish or skillet (or 8 individual 1-cup baking dishes).
- In a large bowl, whisk together milk, sugar, eggs, vanilla, and kirsch if using.
- Add flour and salt, and whisk until smooth.
- Place cherries in the bottom of the prepared dish, or divide among individual dishes.
- Pour the batter over the cherries.
- Bake for 1 hour (or 40 minutes for individual clafoutis), until puffed and browned at the edges and a knife inserted in the center comes out clean.
- Transfer to a cooling rack; the clafoutis will deflate as it cools.
- Sprinkle with powdered sugar and serve warm.
