Classic French Cherry Clafoutis

Ingredients

  • 1 tbsp butter, for greasing
  • 1 1/4 cups milk
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp kirsch (optional)
  • 1/2 tsp kosher salt
  • 1/2 cup all-purpose flour
  • 3 cups cherries, pitted or unpitted
  • Powdered sugar, for serving

Steps

  1. Preheat oven to 350°F (175°C). Generously butter an 8-9 inch pie dish or skillet (or 8 individual 1-cup baking dishes).
  2. In a large bowl, whisk together milk, sugar, eggs, vanilla, and kirsch if using.
  3. Add flour and salt, and whisk until smooth.
  4. Place cherries in the bottom of the prepared dish, or divide among individual dishes.
  5. Pour the batter over the cherries.
  6. Bake for 1 hour (or 40 minutes for individual clafoutis), until puffed and browned at the edges and a knife inserted in the center comes out clean.
  7. Transfer to a cooling rack; the clafoutis will deflate as it cools.
  8. Sprinkle with powdered sugar and serve warm.
