Ackee and Saltfish

Ingredients

  • 1 can ackee
  • 1/2 lb saltfish
  • 1 small onion, sliced
  • 2 garlic cloves
  • 1 small tomato, diced
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1 stalk scallion, chopped
  • 2 sprigs thyme
  • 1/4 scotch bonnet pepper, seeds removed
  • 1/2 tsp black pepper
  • 2 tbsp cooking oil

Steps

  1. Rinse excess salt from the saltfish, then soak in cold water for at least 2 hours (overnight is better).
  2. Drain the water, then scald the saltfish in fresh water for 10-15 minutes.
  3. Remove from heat, drain, and rinse the saltfish in cold water to cool.
  4. If using boneless saltfish, flake it. Otherwise, remove skin and bones, then flake the fish; set aside.
  5. Heat oil in a skillet over medium heat and sauté onion, garlic, scallions, bell peppers, tomato, and scotch bonnet pepper for 3 minutes.
  6. Add the flaked saltfish and cook for another 3 minutes.
  7. Add the ackee, lower the heat, and simmer for 10-15 minutes.
  8. Stir in black pepper, turn off the heat, and serve.
