Htipiti (Greek Red Pepper Feta Dip)

Ingredients

  • 400 g feta cheese
  • 150 g Greek anthotyro or ricotta cheese
  • 1½ tablespoons red wine vinegar
  • 4 tablespoons extra virgin olive oil
  • 250 g roasted red peppers
  • ¼ to ½ teaspoon cayenne pepper
  • salt and pepper, to taste
  • red pepper flakes, for garnish (optional)
  • 5 pita chips or pita bread, for serving
  • 1 teaspoon sweet paprika (for pita chips, optional)
  • 1 teaspoon dried oregano (for pita chips, optional)
  • 1 teaspoon dried thyme (for pita chips, optional)
  • 1 teaspoon onion powder (for pita chips, optional)
  • olive oil (for pita chips, optional)

Steps

  1. Add feta, anthotyro (or ricotta), red wine vinegar, olive oil, roasted red peppers, cayenne pepper, salt, and pepper to a food processor.
  2. Pulse until the mixture is mostly smooth, leaving a bit of texture if you prefer the traditional chunky style, or process until fully smooth if desired.
  3. Transfer the dip to a serving bowl and garnish with red pepper flakes, if using.
  4. If making homemade pita chips, toss pita pieces with olive oil, paprika, oregano, thyme, and onion powder, then bake until crisp.
  5. Serve the dip with pita chips, pita bread, or crusty sourdough bread on the side.
