Greek Souvlaki with Ladolemono

Ingredients
- 750 g (1.6 lbs) boneless pork neck, cut into 2 cm cubes
- 3 tablespoons lemon juice (for marinade)
- 1 teaspoon dried oregano, plus extra for garnish

- 3 tablespoons lemon juice (for ladolemono)
- 6 tablespoons olive oil (for ladolemono)
Steps
- Combine pork, 3 tablespoons lemon juice, and dried oregano in a bowl; toss to coat.
- Marinate in the fridge for at least 1 hour, up to 24 hours. Remove 20 minutes before cooking.
- Soak wooden skewers in water for 30 minutes.
- Thread the marinated pork onto the skewers, packing pieces tightly with no gaps.
- Pat the skewers dry to remove excess moisture.
- Heat a grill or grill pan on high heat.
- Brush the skewers with olive oil on all sides, then season with salt and pepper.
- Grill for 8-10 minutes, turning occasionally, letting each side char before flipping.
- While the skewers cook, whisk together the lemon juice and olive oil for the ladolemono dressing.
- Serve the souvlaki hot off the grill, drizzled with ladolemono and sprinkled with dried oregano.
