Greek Souvlaki with Ladolemono

Ingredients

  • 750 g (1.6 lbs) boneless pork neck, cut into 2 cm cubes
  • 3 tablespoons lemon juice (for marinade)
  • 1 teaspoon dried oregano, plus extra for garnish
  • olive oil, for brushing
  • salt and pepper
  • 3 tablespoons lemon juice (for ladolemono)
  • 6 tablespoons olive oil (for ladolemono)

Steps

  1. Combine pork, 3 tablespoons lemon juice, and dried oregano in a bowl; toss to coat.
  2. Marinate in the fridge for at least 1 hour, up to 24 hours. Remove 20 minutes before cooking.
  3. Soak wooden skewers in water for 30 minutes.
  4. Thread the marinated pork onto the skewers, packing pieces tightly with no gaps.
  5. Pat the skewers dry to remove excess moisture.
  6. Heat a grill or grill pan on high heat.
  7. Brush the skewers with olive oil on all sides, then season with salt and pepper.
  8. Grill for 8-10 minutes, turning occasionally, letting each side char before flipping.
  9. While the skewers cook, whisk together the lemon juice and olive oil for the ladolemono dressing.
  10. Serve the souvlaki hot off the grill, drizzled with ladolemono and sprinkled with dried oregano.
