Grape Molasses (Petimezi)

Ingredients

  • 2.5 liters grape must

Steps

  1. Pour the grape must into a large cooking pot and bring to a gentle simmer.
  2. Simmer over medium-low heat until reduced to about 1/4 of the original volume.
  3. Store the reduced syrup in sterilized glass jars or bottles; keeps for up to a year.
  4. For a thicker molasses, continue simmering until the liquid is thick like honey and reduced to about 1/5 of the original volume.

Notes

Thicker reduction (to 1/5 volume) yields a honey-like consistency, sometimes called thick Petimezi.
