Fried Squid (Calamari)

Ingredients

  • 650 g (1.4 lb) squid, cleaned
  • 1 liter water, room temperature
  • 30 g (3 tbsp) fine sea salt
  • all-purpose flour, for coating
  • frying oil (sunflower oil)
  • 1 lemon, cut into quarters, to serve
  • 200 g (¾ cup) Greek yogurt
  • 100 g (½ cup) mayonnaise
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Steps

  1. Make the yogurt dip: In a bowl, combine Greek yogurt, mayonnaise, minced garlic, chopped dill, and lemon juice. Season with salt and pepper, mix well, and refrigerate until ready to serve.
  2. Prepare the squid: Clean the squid and cut into rings or strips.
  3. Dissolve the sea salt in the room temperature water to make a brine.
  4. Soak the squid in the brine for about 30 minutes, then drain and pat dry.
  5. Fry the squid: Heat frying oil in a deep pan or skillet until hot.
  6. Dredge the squid pieces in flour, shaking off excess.
  7. Fry the squid in batches until golden brown and crispy, about 2-3 minutes per batch.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve immediately with lemon wedges and the yogurt dip.
