Fried Squid (Calamari)

Ingredients
- 650 g (1.4 lb) squid, cleaned
- 1 liter water, room temperature
- 30 g (3 tbsp) fine sea salt
- all-purpose flour, for coating
- frying oil (sunflower oil)
- 1 lemon, cut into quarters, to serve
- 200 g (¾ cup) Greek yogurt
- 100 g (½ cup) mayonnaise
- 2 garlic cloves, minced
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon lemon juice
- salt and pepper, to taste
Steps
- Make the yogurt dip: In a bowl, combine Greek yogurt, mayonnaise, minced garlic, chopped dill, and lemon juice. Season with salt and pepper, mix well, and refrigerate until ready to serve.
- Prepare the squid: Clean the squid and cut into rings or strips.
- Dissolve the sea salt in the room temperature water to make a brine.
- Soak the squid in the brine for about 30 minutes, then drain and pat dry.
- Fry the squid: Heat frying oil in a deep pan or skillet until hot.
- Dredge the squid pieces in flour, shaking off excess.
- Fry the squid in batches until golden brown and crispy, about 2-3 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
- Serve immediately with lemon wedges and the yogurt dip.
