Fried Eggs & Vegetables (Fritada de Pimientos con Huevos)

Ingredients
- 1/2 cup extra virgin olive oil
- 2 yellow onions, diced
- 6 cloves garlic, thinly sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 tsp sweet smoked Spanish paprika
- 1/4 tsp ground cumin
- 1 can diced tomatoes (15 oz)
- 4 eggs
- sea salt & black pepper, to taste
- chopped parsley, for garnish
Steps
- Heat 1/4 cup olive oil in a large frying pan over medium heat.
- Add the diced onions and sliced garlic, stirring every 1-2 minutes until lightly sautéed, about 4-5 minutes.
- Add the diced bell peppers and cook, stirring occasionally, for about 5 minutes until softened.
- Stir in the paprika and cumin, then add the diced tomatoes. Season with salt and pepper, mix well, and reduce to low heat.
- Let the vegetable mixture simmer gently for about 10 minutes.
- Meanwhile, heat 1/4 cup olive oil in a separate frying pan over medium heat.
- Fry the eggs two at a time until the whites are set but the yolks remain creamy. Season with salt and pepper.
- Remove the vegetable pan from heat, top with the fried eggs, garnish with chopped parsley, and serve immediately.
