Fried Eggs & Vegetables (Fritada de Pimientos con Huevos)

Ingredients

  • 1/2 cup extra virgin olive oil
  • 2 yellow onions, diced
  • 6 cloves garlic, thinly sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 tsp sweet smoked Spanish paprika
  • 1/4 tsp ground cumin
  • 1 can diced tomatoes (15 oz)
  • 4 eggs
  • sea salt & black pepper, to taste
  • chopped parsley, for garnish

Steps

  1. Heat 1/4 cup olive oil in a large frying pan over medium heat.
  2. Add the diced onions and sliced garlic, stirring every 1-2 minutes until lightly sautéed, about 4-5 minutes.
  3. Add the diced bell peppers and cook, stirring occasionally, for about 5 minutes until softened.
  4. Stir in the paprika and cumin, then add the diced tomatoes. Season with salt and pepper, mix well, and reduce to low heat.
  5. Let the vegetable mixture simmer gently for about 10 minutes.
  6. Meanwhile, heat 1/4 cup olive oil in a separate frying pan over medium heat.
  7. Fry the eggs two at a time until the whites are set but the yolks remain creamy. Season with salt and pepper.
  8. Remove the vegetable pan from heat, top with the fried eggs, garnish with chopped parsley, and serve immediately.
