Fried Calamari with Homemade Garlic Aioli

Ingredients

  • 2 tubes squid, about 1 1/2 pounds each
  • 1/2 cup all-purpose flour
  • 1/2 tsp sea salt
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1/2 cup sunflower oil
  • 2 cloves garlic
  • 1 egg yolk
  • 1/2 tsp lemon juice
  • 1/4 cup extra virgin Spanish olive oil
  • fresh parsley, for garnish

Steps

  1. Mince the garlic and pound into a paste using a mortar and pestle.
  2. Add the egg yolk, lemon juice, and a pinch of sea salt to the garlic paste, mixing well.
  3. Slowly drizzle in the olive oil while continuously mixing until the aioli reaches a mayonnaise-like consistency.
  4. Cover the aioli and refrigerate until ready to serve.
  5. In a bowl, combine the flour, sea salt, dried parsley, and dried thyme.
  6. Rinse the squid tubes under cold water, pat dry, and cut into 1/4-inch thick rings.
  7. Place the squid rings and flour mixture into a plastic bag and toss until evenly coated.
  8. Heat sunflower oil in a non-stick frying pan over medium-high heat.
  9. Fry the squid rings in batches, about 3 minutes per side, until golden.
  10. Transfer fried squid to a plate lined with paper towels to drain.
  11. Serve the calamari with the garlic aioli on the side, garnished with fresh parsley.
