Fried Calamari with Homemade Garlic Aioli

Ingredients
- 2 tubes squid, about 1 1/2 pounds each
- 1/2 cup all-purpose flour
- 1/2 tsp sea salt
- 1 tsp dried parsley
- 1 tsp dried thyme
- 1/2 cup sunflower oil
- 2 cloves garlic
- 1 egg yolk
- 1/2 tsp lemon juice
- 1/4 cup extra virgin Spanish olive oil
- fresh parsley, for garnish
Steps
- Mince the garlic and pound into a paste using a mortar and pestle.
- Add the egg yolk, lemon juice, and a pinch of sea salt to the garlic paste, mixing well.
- Slowly drizzle in the olive oil while continuously mixing until the aioli reaches a mayonnaise-like consistency.
- Cover the aioli and refrigerate until ready to serve.
- In a bowl, combine the flour, sea salt, dried parsley, and dried thyme.
- Rinse the squid tubes under cold water, pat dry, and cut into 1/4-inch thick rings.
- Place the squid rings and flour mixture into a plastic bag and toss until evenly coated.
- Heat sunflower oil in a non-stick frying pan over medium-high heat.
- Fry the squid rings in batches, about 3 minutes per side, until golden.
- Transfer fried squid to a plate lined with paper towels to drain.
- Serve the calamari with the garlic aioli on the side, garnished with fresh parsley.
