French Egg Salad

Ingredients
- 5 large eggs
- 5 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 green onion, finely chopped
- 5 cornichons, chopped
- 1 tbsp brined capers, drained
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika
- 2 tbsp fresh parsley, finely chopped
- 2 tbsp fresh chives, finely chopped
Steps
- Place eggs in a saucepan and cover with water by 1 inch. Bring to a rapid boil, boil for 1 minute, then remove from heat.
- Cover and let eggs rest in the hot water for 10 minutes, then remove and rinse under cold water.
- In a large bowl, combine mayonnaise, Dijon mustard, green onion, cornichons, capers, salt, pepper, paprika, parsley, and chives. Stir to combine.
- Peel the eggs and roughly chop, keeping some larger chunks.
- Add chopped eggs to the dressing and gently stir until just coated. Taste and adjust seasoning if needed.
- Cover and chill for at least 15 minutes before serving. Serve with baguette, toasted bread, or in lettuce wraps.
