French Egg Salad

Ingredients

  • 5 large eggs
  • 5 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 green onion, finely chopped
  • 5 cornichons, chopped
  • 1 tbsp brined capers, drained
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp fresh chives, finely chopped

Steps

  1. Place eggs in a saucepan and cover with water by 1 inch. Bring to a rapid boil, boil for 1 minute, then remove from heat.
  2. Cover and let eggs rest in the hot water for 10 minutes, then remove and rinse under cold water.
  3. In a large bowl, combine mayonnaise, Dijon mustard, green onion, cornichons, capers, salt, pepper, paprika, parsley, and chives. Stir to combine.
  4. Peel the eggs and roughly chop, keeping some larger chunks.
  5. Add chopped eggs to the dressing and gently stir until just coated. Taste and adjust seasoning if needed.
  6. Cover and chill for at least 15 minutes before serving. Serve with baguette, toasted bread, or in lettuce wraps.
