Mediterranean White Bean Salad

Ingredients

  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, finely grated
  • 1 tsp dried oregano
  • 25 oz (700 g) white beans, drained and rinsed
  • 1 small red onion, finely chopped
  • 1/2 English cucumber, finely diced
  • 1 red bell pepper, finely chopped
  • 1/3 cup sliced black olives
  • 4 oz fresh mozzarella balls, halved
  • 12 fresh basil leaves, finely chopped
  • Sea salt and black pepper, to taste

Steps

  1. In a bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, grated garlic, and oregano; season with salt and pepper. Set aside.
  2. Drain and rinse the white beans, then shake off excess water and add to a large bowl.
  3. Add the red onion, cucumber, red bell pepper, black olives, mozzarella, and basil to the beans.
  4. Pour the dressing over the salad, season with salt and pepper, and gently mix until well combined.
  5. Serve at room temperature or chilled. Keeps in the fridge for 3-4 days.
