French-Style Couscous Salad (Taboulé)

Ingredients

  • 1 3/4 cups chicken broth (or water with 1/3 tsp salt)
  • 1 1/2 cups (10 oz) couscous
  • 2 tbsp extra-virgin olive oil
  • 1/3 cup raisins
  • 2 cups diced tomatoes
  • 1/4 red bell pepper, seeded and diced
  • 1/4 green bell pepper, seeded and diced
  • 1/2 bunch fresh parsley, chopped
  • 6-7 sprigs fresh mint, stemmed and chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cumin
  • 1/2 lemon, juiced
  • 3 tbsp extra-virgin olive oil

Steps

  1. Soak the raisins in a bowl of water, making sure they are fully covered, for at least 30 minutes.
  2. Bring the chicken broth (or salted water) to a boil in a medium pot.
  3. Stir in the olive oil and couscous, then remove the pot from heat.
  4. Cover and let the couscous steam for 6 minutes.
  5. Fluff the couscous with a fork and transfer it to a bowl to cool to room temperature.
  6. Drain the raisins and add them to the cooled couscous along with the diced tomatoes, bell peppers, parsley, and mint.
  7. In a small bowl, mix the salt, black pepper, cayenne, cumin, lemon juice, and olive oil to make the dressing.
  8. Pour the dressing over the couscous mixture and stir to combine.
  9. Cover and chill for at least 2 hours before serving to let the flavors meld.

Notes

The salad should have a slightly moist, chewy texture after chilling.
