French-Style Couscous Salad (Taboulé)

Ingredients
- 1 3/4 cups chicken broth (or water with 1/3 tsp salt)
- 1 1/2 cups (10 oz) couscous
- 2 tbsp extra-virgin olive oil
- 1/3 cup raisins
- 2 cups diced tomatoes
- 1/4 red bell pepper, seeded and diced
- 1/4 green bell pepper, seeded and diced
- 1/2 bunch fresh parsley, chopped
- 6-7 sprigs fresh mint, stemmed and chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp ground cumin
- 1/2 lemon, juiced
- 3 tbsp extra-virgin olive oil
Steps
- Soak the raisins in a bowl of water, making sure they are fully covered, for at least 30 minutes.
- Bring the chicken broth (or salted water) to a boil in a medium pot.
- Stir in the olive oil and couscous, then remove the pot from heat.
- Cover and let the couscous steam for 6 minutes.
- Fluff the couscous with a fork and transfer it to a bowl to cool to room temperature.
- Drain the raisins and add them to the cooled couscous along with the diced tomatoes, bell peppers, parsley, and mint.
- In a small bowl, mix the salt, black pepper, cayenne, cumin, lemon juice, and olive oil to make the dressing.
- Pour the dressing over the couscous mixture and stir to combine.
- Cover and chill for at least 2 hours before serving to let the flavors meld.
Notes
The salad should have a slightly moist, chewy texture after chilling.
