Crustless Cheese Pie (Tiropita Without Phyllo)

Ingredients

  • 150 grams (2/3 cup) Greek yogurt
  • 200 ml buttermilk or sour milk
  • 180 ml water
  • 120 ml olive oil, plus extra for the pan
  • 2 large eggs
  • 220 grams (2 cups) all-purpose flour
  • 100 grams (1/2 cup + 2 tablespoons) corn flour (maize flour, not cornstarch)
  • 1 tablespoon baking powder
  • 2/3 teaspoon salt
  • 350 grams (12.3 oz) feta cheese, coarsely crumbled
  • sesame seeds

Steps

  1. Preheat oven to 180°C (355°F).
  2. In a bowl, combine flour, corn flour, baking powder, and salt.
  3. In a large mixing bowl, whisk together eggs and yogurt.
  4. Whisk in olive oil, water, and buttermilk.
  5. Gradually mix in the dry ingredients until the batter is uniform.
  6. Stir in the crumbled feta cheese.
  7. Brush a 9 x 13-inch (23 x 33 cm) pan with olive oil to coat the bottom.
  8. Sprinkle sesame seeds over the bottom of the pan.
  9. Pour the batter into the pan and spread evenly.
  10. Drizzle olive oil on top and sprinkle with more sesame seeds.
  11. Bake for 40 to 50 minutes, until golden brown on top.
  12. Cool for 30 minutes before slicing.
  13. Cut into 12 square pieces and serve.
