Cucumber Tomato Salad

Ingredients
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper, freshly cracked
- 2 cucumbers, peeled and chopped
- 4 Roma tomatoes, chopped
- ½ small red onion, thinly sliced
- 1 green bell pepper, chopped
- ¼ bunch fresh parsley, chopped
- 2 oz feta, crumbled
- kalamata olives (optional)
- roasted red pepper (optional)
Steps
- Gather and prepare all ingredients.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to make the dressing. Set aside.
- Peel and dice the cucumbers, tomatoes, and bell pepper.
- Thinly slice the red onion and soak in ice water for 5-10 minutes to mellow its flavor, then drain.
- Pull parsley leaves from stems and roughly chop. Crumble the feta if needed.
- Combine cucumbers, tomatoes, bell pepper, red onion, parsley, and feta in a large bowl. Add olives and roasted red pepper if using.
- Pour dressing over the salad and toss to combine. Serve immediately or refrigerate, stirring before serving.
Notes
Salad keeps well in the refrigerator for a few days; stir before serving to redistribute flavors.
