Cucumber Tomato Salad

Ingredients

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper, freshly cracked
  • 2 cucumbers, peeled and chopped
  • 4 Roma tomatoes, chopped
  • ½ small red onion, thinly sliced
  • 1 green bell pepper, chopped
  • ¼ bunch fresh parsley, chopped
  • 2 oz feta, crumbled
  • kalamata olives (optional)
  • roasted red pepper (optional)

Steps

  1. Gather and prepare all ingredients.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to make the dressing. Set aside.
  3. Peel and dice the cucumbers, tomatoes, and bell pepper.
  4. Thinly slice the red onion and soak in ice water for 5-10 minutes to mellow its flavor, then drain.
  5. Pull parsley leaves from stems and roughly chop. Crumble the feta if needed.
  6. Combine cucumbers, tomatoes, bell pepper, red onion, parsley, and feta in a large bowl. Add olives and roasted red pepper if using.
  7. Pour dressing over the salad and toss to combine. Serve immediately or refrigerate, stirring before serving.

Notes

Salad keeps well in the refrigerator for a few days; stir before serving to redistribute flavors.
