Classic French Celery Root Remoulade

Ingredients

  • 1 medium celery root (500-600g)
  • 1 tbsp lemon juice
  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 5-6 French cornichons, diced (or gherkins)
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp capers (optional)

Steps

  1. Peel the celery root and julienne or grate it into thin, matchstick-sized strips.
  2. Place the strips in a bowl and sprinkle with lemon juice as you go to prevent browning.
  3. In a large bowl, whisk together mayonnaise, Dijon mustard, diced cornichons, salt, pepper, and capers if using.
  4. Add the celery root to the dressing and toss until evenly coated.
  5. Cover and chill for at least 2 hours before serving, allowing the celery root to soften and absorb the flavors.

Notes

Flavor improves after chilling, as the celery root softens and absorbs the dressing.
