Classic French Celery Root Remoulade

Ingredients
- 1 medium celery root (500-600g)
- 1 tbsp lemon juice
- 1/4 cup mayonnaise
- 2 tbsp Dijon mustard
- 5-6 French cornichons, diced (or gherkins)
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp capers (optional)
Steps
- Peel the celery root and julienne or grate it into thin, matchstick-sized strips.
- Place the strips in a bowl and sprinkle with lemon juice as you go to prevent browning.
- In a large bowl, whisk together mayonnaise, Dijon mustard, diced cornichons, salt, pepper, and capers if using.
- Add the celery root to the dressing and toss until evenly coated.
- Cover and chill for at least 2 hours before serving, allowing the celery root to soften and absorb the flavors.
Notes
Flavor improves after chilling, as the celery root softens and absorbs the dressing.
