Sweet Potato Casserole

Ingredients
- 3 pounds sweet potatoes
- ¼ cup milk
- 2 large eggs
- ¼ cup heavy cream
- 4 tablespoons unsalted butter, softened
- 2 tablespoons brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- salt, to taste
- ½ cup all-purpose flour
- ½ cup brown sugar
- ¼ cup unsalted butter, softened
- 1 pinch salt
- 4 ounces chopped pecans
- 1 cup mini marshmallows
Steps
- Preheat oven to 400°F (205°C).
- Wash sweet potatoes, pierce each several times with a fork, and wrap in aluminum foil.
- Bake for 50-60 minutes, until a fork easily pierces the center. Let cool slightly.
- Remove skins and scoop the sweet potato flesh into a large bowl.
- Mash sweet potatoes until smooth, then whisk in milk, eggs, heavy cream, butter, brown sugar, cinnamon, ginger, nutmeg, vanilla, and salt until smooth.
- Spread the mashed sweet potato mixture into a greased baking dish.
- Mix flour, brown sugar, butter, and salt in a bowl until it clumps into a streusel.
- Stir pecans into the streusel and spread evenly over the sweet potato mixture.
- Bake for 25-30 minutes, until lightly browned and bubbly.
- Sprinkle marshmallows on top and broil for 3-5 minutes until golden brown.
- Let cool slightly before serving hot.
