Sweet Potato Casserole

Ingredients

  • 3 pounds sweet potatoes
  • ¼ cup milk
  • 2 large eggs
  • ¼ cup heavy cream
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • salt, to taste
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup unsalted butter, softened
  • 1 pinch salt
  • 4 ounces chopped pecans
  • 1 cup mini marshmallows

Steps

  1. Preheat oven to 400°F (205°C).
  2. Wash sweet potatoes, pierce each several times with a fork, and wrap in aluminum foil.
  3. Bake for 50-60 minutes, until a fork easily pierces the center. Let cool slightly.
  4. Remove skins and scoop the sweet potato flesh into a large bowl.
  5. Mash sweet potatoes until smooth, then whisk in milk, eggs, heavy cream, butter, brown sugar, cinnamon, ginger, nutmeg, vanilla, and salt until smooth.
  6. Spread the mashed sweet potato mixture into a greased baking dish.
  7. Mix flour, brown sugar, butter, and salt in a bowl until it clumps into a streusel.
  8. Stir pecans into the streusel and spread evenly over the sweet potato mixture.
  9. Bake for 25-30 minutes, until lightly browned and bubbly.
  10. Sprinkle marshmallows on top and broil for 3-5 minutes until golden brown.
  11. Let cool slightly before serving hot.
