Bocadillo de Sardinas (Spanish Sardine Sandwich)

Ingredients

  • 2 cans sardines in olive oil (4 oz/120 g each)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 2 cloves garlic, finely grated
  • 1 tsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tomato, finely grated
  • 1 baguette
  • Sea salt and black pepper, to taste
  • Chopped parsley, for garnish

Steps

  1. Drain the sardines through a fine sieve set over a bowl, reserving the oil.
  2. Heat a large frying pan over medium heat and add the reserved sardine oil.
  3. Add the sliced onion, bell pepper, and garlic, stirring every 1-2 minutes to sauté evenly.
  4. Meanwhile, combine mayonnaise, Dijon mustard, grated garlic, lemon juice, and olive oil in a bowl; season with salt and pepper and whisk together.
  5. Sauté the vegetables for 7-8 minutes until lightly softened, season with salt and pepper, then remove from heat.
  6. Cut the baguette into 3-inch (8 cm) pieces, then slice each piece in half lengthwise.
  7. Spread the aioli on the top and bottom of each baguette piece.
  8. Add grated tomato to the bottom slice, followed by a generous portion of the sautéed vegetables and two sardines.
  9. Top with chopped parsley and serve.
