Bocadillo de Sardinas (Spanish Sardine Sandwich)

Ingredients
- 2 cans sardines in olive oil (4 oz/120 g each)
- 1 large onion, thinly sliced
- 1 large green bell pepper, thinly sliced
- 4 cloves garlic, thinly sliced
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 2 cloves garlic, finely grated
- 1 tsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tomato, finely grated
- 1 baguette
- Sea salt and black pepper, to taste
- Chopped parsley, for garnish
Steps
- Drain the sardines through a fine sieve set over a bowl, reserving the oil.
- Heat a large frying pan over medium heat and add the reserved sardine oil.
- Add the sliced onion, bell pepper, and garlic, stirring every 1-2 minutes to sauté evenly.
- Meanwhile, combine mayonnaise, Dijon mustard, grated garlic, lemon juice, and olive oil in a bowl; season with salt and pepper and whisk together.
- Sauté the vegetables for 7-8 minutes until lightly softened, season with salt and pepper, then remove from heat.
- Cut the baguette into 3-inch (8 cm) pieces, then slice each piece in half lengthwise.
- Spread the aioli on the top and bottom of each baguette piece.
- Add grated tomato to the bottom slice, followed by a generous portion of the sautéed vegetables and two sardines.
- Top with chopped parsley and serve.
