Classic Parisian Salad (Salade Parisienne)

Ingredients
- 4 eggs, hard boiled and quartered
- 300g (0.6 lbs) new potatoes
- 1 tbsp salt
- 1 medium lettuce (Batavia, Romaine, or Frisée)
- 4 slices (150-200g) Parisian ham
- 150g cheese (gruyère, comté, or Emmental), diced
- 150g mushrooms, thinly sliced (white or cremini)
- 8-10 cornichons, chopped
- 7-8 sprigs chives, minced
- Salt and black pepper, to taste
- French vinaigrette, for serving
Steps
- Place eggs in a saucepan, cover with water by 1 inch, and bring to a rapid boil. Boil for 1 minute, then remove from heat, cover, and let rest for 10 minutes.
- Remove eggs from water, rinse under cold water, peel, and slice into quarters.
- Halve or quarter the potatoes. Place in a pot, cover with water by 1 inch, add 1 tbsp salt, and bring to a boil.
- Reduce heat to medium and simmer potatoes for about 15 minutes until fork-tender. Drain and rinse under cold water until cool.
- Wash and dry the lettuce, then tear the leaves into large pieces by hand.
- Cut the ham slices into large strips.
- Divide the lettuce among 4 plates. Top each with equal amounts of ham, cheese, mushrooms, cornichons, and potatoes.
- Top each plate with 4 egg quarters.
- Dress with vinaigrette, season with salt, pepper, and chives to taste, and serve immediately.
Notes
Best enjoyed within 2-3 hours after dressing with vinaigrette.
