Classic Parisian Salad (Salade Parisienne)

Ingredients

  • 4 eggs, hard boiled and quartered
  • 300g (0.6 lbs) new potatoes
  • 1 tbsp salt
  • 1 medium lettuce (Batavia, Romaine, or Frisée)
  • 4 slices (150-200g) Parisian ham
  • 150g cheese (gruyère, comté, or Emmental), diced
  • 150g mushrooms, thinly sliced (white or cremini)
  • 8-10 cornichons, chopped
  • 7-8 sprigs chives, minced
  • Salt and black pepper, to taste
  • French vinaigrette, for serving

Steps

  1. Place eggs in a saucepan, cover with water by 1 inch, and bring to a rapid boil. Boil for 1 minute, then remove from heat, cover, and let rest for 10 minutes.
  2. Remove eggs from water, rinse under cold water, peel, and slice into quarters.
  3. Halve or quarter the potatoes. Place in a pot, cover with water by 1 inch, add 1 tbsp salt, and bring to a boil.
  4. Reduce heat to medium and simmer potatoes for about 15 minutes until fork-tender. Drain and rinse under cold water until cool.
  5. Wash and dry the lettuce, then tear the leaves into large pieces by hand.
  6. Cut the ham slices into large strips.
  7. Divide the lettuce among 4 plates. Top each with equal amounts of ham, cheese, mushrooms, cornichons, and potatoes.
  8. Top each plate with 4 egg quarters.
  9. Dress with vinaigrette, season with salt, pepper, and chives to taste, and serve immediately.

Notes

Best enjoyed within 2-3 hours after dressing with vinaigrette.
