Banana Muffins

Ingredients
- 4 Tbsp salted butter, room temperature
- 1/4 cup cooking oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1.5 cups ripe bananas (about 3-4 bananas)
- 2 large eggs, room temperature
- 1/4 cup plain yogurt, room temperature
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
Steps
- Preheat oven to 350°F.
- Beat butter, cooking oil, granulated sugar, and brown sugar together until light and creamy.
- Mash bananas and add to the mixture along with eggs, yogurt, and vanilla extract; beat until smooth.
- In a separate bowl, mix flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
- Add the flour mixture to the wet ingredients and fold together just until combined; do not overmix.
- Divide batter evenly among 12 greased or lined muffin cups.
- Bake 30-35 minutes, until risen and browned, and a toothpick inserted into the center comes out clean.
- Cool muffins in the pan for about 5 minutes, then transfer to a wire rack to finish cooling.
