Banana Muffins

Ingredients

  • 4 Tbsp salted butter, room temperature
  • 1/4 cup cooking oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1.5 cups ripe bananas (about 3-4 bananas)
  • 2 large eggs, room temperature
  • 1/4 cup plain yogurt, room temperature
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon

Steps

  1. Preheat oven to 350°F.
  2. Beat butter, cooking oil, granulated sugar, and brown sugar together until light and creamy.
  3. Mash bananas and add to the mixture along with eggs, yogurt, and vanilla extract; beat until smooth.
  4. In a separate bowl, mix flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
  5. Add the flour mixture to the wet ingredients and fold together just until combined; do not overmix.
  6. Divide batter evenly among 12 greased or lined muffin cups.
  7. Bake 30-35 minutes, until risen and browned, and a toothpick inserted into the center comes out clean.
  8. Cool muffins in the pan for about 5 minutes, then transfer to a wire rack to finish cooling.
