French Grated Carrot Salad (Carottes rapées)

Ingredients

  • 1 lb (450g) carrots, peeled and grated (about 3 1/2 cups)
  • 3 tbsp flat-leaf parsley, stemmed and chopped
  • 2 tbsp raisins (optional)
  • 2 tbsp pine nuts (optional)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1/2 tsp fresh ground black pepper, to taste
  • 1/2 tsp salt, to taste

Steps

  1. Place grated carrots in a large bowl and top with chopped parsley, pine nuts, and raisins.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, a pinch of black pepper, and a pinch of salt.
  3. Pour the vinaigrette over the carrots and stir until evenly coated.
  4. Taste and adjust seasoning if needed.
  5. Cover and chill for 30 minutes to let flavors develop and carrots soften slightly.
  6. Toss again right before serving.
