French Warm Goat Cheese Salad (Salade de Chèvre Chaud)

Ingredients

  • 5 oz (120g) ripened goat cheese, cut into 6 slices (20g each)
  • 6 slices country bread or baguette
  • 1 tbsp (15ml) extra virgin olive oil
  • ¼ tsp freshly ground black pepper
  • 3.5 oz (100g) lardons or bacon strips, cut into matchsticks
  • 1/3 cup (40g) walnuts, roughly chopped
  • 1 large tomato
  • 1/2 medium head lettuce (Batavia, Romaine, or Frisée)
  • 1 tbsp fresh parsley
  • ¼ cup French vinaigrette, for serving

Steps

  1. Preheat oven to 350°F (180°C) with a rack in the middle. Line a baking sheet with parchment paper.
  2. In a frying pan, fry the lardons or bacon matchsticks for 5 minutes until crisp. Remove and set aside, leaving the pan unwashed.
  3. Add the chopped walnuts to the same pan and toast for 2 minutes until fragrant. Set aside.
  4. Cut the tomato into wedges. Wash and dry the lettuce, then tear it into large pieces.
  5. Slice the goat cheese into 6 coins and place one on each slice of bread. Season with black pepper and drizzle with olive oil.
  6. Place the toasts on the prepared baking sheet and bake for 10 minutes, finishing with 1 minute under the broiler.
  7. Divide the lettuce between 2 plates. Top with tomato wedges, cooked lardons, and toasted walnuts.
  8. Sprinkle with parsley and drizzle each plate with about 2 tablespoons of vinaigrette.
  9. Top each salad with hot goat cheese toasts straight from the oven and serve immediately.
