French Warm Goat Cheese Salad (Salade de Chèvre Chaud)

Ingredients
- 5 oz (120g) ripened goat cheese, cut into 6 slices (20g each)
- 6 slices country bread or baguette
- 1 tbsp (15ml) extra virgin olive oil
- ¼ tsp freshly ground black pepper
- 3.5 oz (100g) lardons or bacon strips, cut into matchsticks
- 1/3 cup (40g) walnuts, roughly chopped
- 1 large tomato
- 1/2 medium head lettuce (Batavia, Romaine, or Frisée)
- 1 tbsp fresh parsley
- ¼ cup French vinaigrette, for serving
Steps
- Preheat oven to 350°F (180°C) with a rack in the middle. Line a baking sheet with parchment paper.
- In a frying pan, fry the lardons or bacon matchsticks for 5 minutes until crisp. Remove and set aside, leaving the pan unwashed.
- Add the chopped walnuts to the same pan and toast for 2 minutes until fragrant. Set aside.
- Cut the tomato into wedges. Wash and dry the lettuce, then tear it into large pieces.
- Slice the goat cheese into 6 coins and place one on each slice of bread. Season with black pepper and drizzle with olive oil.
- Place the toasts on the prepared baking sheet and bake for 10 minutes, finishing with 1 minute under the broiler.
- Divide the lettuce between 2 plates. Top with tomato wedges, cooked lardons, and toasted walnuts.
- Sprinkle with parsley and drizzle each plate with about 2 tablespoons of vinaigrette.
- Top each salad with hot goat cheese toasts straight from the oven and serve immediately.
