Shrimp Alfredo

Ingredients

  • 2 tablespoons oil
  • 1 pound jumbo shrimp, peeled and deveined
  • 1 teaspoon Creole seasoning
  • Salt and pepper, to taste
  • 3 tablespoons butter
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh thyme
  • 1 teaspoon Italian seasoning
  • 1½ cups heavy whipping cream
  • ½ cup whole milk
  • 2-3 ounces cream cheese, softened
  • 1-1½ cups Parmesan cheese, freshly grated
  • Salt and pepper, to taste
  • 8 ounces spaghetti or pasta of choice

Steps

  1. Heat oil in a skillet, add shrimp, and let sit 30 seconds before flipping.
  2. Season shrimp with Creole seasoning, salt, and pepper; cook 4-5 minutes, flipping to cook evenly until done. Set aside.
  3. In another skillet, melt butter over medium heat, then add garlic, thyme, and Italian seasoning. Sauté 1-2 minutes until fragrant.
  4. Lower heat to medium-low; whisk in cream and milk, then add cream cheese and whisk until smooth.
  5. Add Parmesan cheese, whisking until fully blended. Reduce heat to a simmer and season with salt and pepper.
  6. Simmer 3-4 minutes until sauce thickens.
  7. Toss sauce with cooked pasta and shrimp; serve immediately, or cool and refrigerate for later use.
