Shrimp Alfredo

Ingredients
- 2 tablespoons oil
- 1 pound jumbo shrimp, peeled and deveined
- 1 teaspoon Creole seasoning
- Salt and pepper, to taste
- 3 tablespoons butter
- 2 teaspoons minced garlic
- 1 teaspoon fresh thyme
- 1 teaspoon Italian seasoning
- 1½ cups heavy whipping cream
- ½ cup whole milk
- 2-3 ounces cream cheese, softened
- 1-1½ cups Parmesan cheese, freshly grated
- Salt and pepper, to taste
- 8 ounces spaghetti or pasta of choice
Steps
- Heat oil in a skillet, add shrimp, and let sit 30 seconds before flipping.
- Season shrimp with Creole seasoning, salt, and pepper; cook 4-5 minutes, flipping to cook evenly until done. Set aside.
- In another skillet, melt butter over medium heat, then add garlic, thyme, and Italian seasoning. Sauté 1-2 minutes until fragrant.
- Lower heat to medium-low; whisk in cream and milk, then add cream cheese and whisk until smooth.
- Add Parmesan cheese, whisking until fully blended. Reduce heat to a simmer and season with salt and pepper.
- Simmer 3-4 minutes until sauce thickens.
- Toss sauce with cooked pasta and shrimp; serve immediately, or cool and refrigerate for later use.
