Creamy Semolina Pudding

Ingredients

  • 1 liter milk
  • 150 grams (¾ cup) sugar, divided
  • 1½ teaspoons vanilla extract
  • 4 eggs
  • 10 tablespoons fine semolina
  • 2 tablespoons (30 grams) butter
  • sugar and ground cinnamon, to serve

Steps

  1. Heat milk, half the sugar, vanilla extract, and semolina in a pot, stirring often with a whisk.
  2. In a separate bowl, beat the eggs with the remaining sugar until foamy and fluffy.
  3. When the milk mixture is steaming hot, slowly add half of it into the eggs while whisking constantly.
  4. Transfer the egg mixture back into the pot with the remaining milk mixture.
  5. Simmer over medium-low heat for a couple of minutes, stirring constantly, until the cream thickens.
  6. Remove from heat and let cool for 10 minutes, stirring occasionally.
  7. Stir in the butter.
  8. Transfer the pudding into small bowls and serve warm or slightly cooled, topped with cinnamon and sugar.

Notes

Stir the semolina mixture frequently while heating, as it tends to sink and stick to the bottom of the pot.
