Dirty Rice

Ingredients
- 4-5 slices bacon, chopped
- 1 pound andouille sausage or kielbasa, chopped (optional)
- 1 medium onion, chopped
- 3-4 teaspoons minced garlic
- 2 teaspoons fresh thyme
- 2 bay leaves
- 1 pound chicken livers, chopped (optional)
- 1 pound ground beef
- ½ pound ground pork sausage (optional)
- 1 tablespoon Creole seasoning, or more to taste
- 1 small bell pepper, diced
- 2 stalks celery, chopped
- ½ teaspoon black pepper, or more to taste
- salt, to taste
- 1½-2 cups beef stock
- 6 cups cooked rice
- 3-4 green onions, chopped
- 2-3 tablespoons chopped parsley
- pepper flakes or hot sauce, to taste
Steps
- Fry chopped bacon (and optional sausage) in a large sauté pan until cooked, 4-5 minutes. Remove and set aside.
- Add a tablespoon of oil to the pan if needed.
- Add onions, garlic, thyme, and bay leaf; sauté 2-3 minutes.
- Add chicken liver (if using), ground beef, pork sausage, and Creole seasoning. Cook, stirring, about 2 minutes.
- Add bell peppers, celery, salt, and pepper. Cook, stirring, 5 more minutes.
- Pour in about 1½ cups beef stock, bring to a boil, then lower heat and simmer about 5 minutes.
- Add cooked rice and green onions; mix thoroughly. Cook until rice is heated through, 5-7 minutes, adding more stock if needed to prevent burning.
- Remove from heat, discard bay leaves, stir in parsley, and serve with hot sauce or red pepper flakes.
