Dirty Rice

Ingredients

  • 4-5 slices bacon, chopped
  • 1 pound andouille sausage or kielbasa, chopped (optional)
  • 1 medium onion, chopped
  • 3-4 teaspoons minced garlic
  • 2 teaspoons fresh thyme
  • 2 bay leaves
  • 1 pound chicken livers, chopped (optional)
  • 1 pound ground beef
  • ½ pound ground pork sausage (optional)
  • 1 tablespoon Creole seasoning, or more to taste
  • 1 small bell pepper, diced
  • 2 stalks celery, chopped
  • ½ teaspoon black pepper, or more to taste
  • salt, to taste
  • 1½-2 cups beef stock
  • 6 cups cooked rice
  • 3-4 green onions, chopped
  • 2-3 tablespoons chopped parsley
  • pepper flakes or hot sauce, to taste

Steps

  1. Fry chopped bacon (and optional sausage) in a large sauté pan until cooked, 4-5 minutes. Remove and set aside.
  2. Add a tablespoon of oil to the pan if needed.
  3. Add onions, garlic, thyme, and bay leaf; sauté 2-3 minutes.
  4. Add chicken liver (if using), ground beef, pork sausage, and Creole seasoning. Cook, stirring, about 2 minutes.
  5. Add bell peppers, celery, salt, and pepper. Cook, stirring, 5 more minutes.
  6. Pour in about 1½ cups beef stock, bring to a boil, then lower heat and simmer about 5 minutes.
  7. Add cooked rice and green onions; mix thoroughly. Cook until rice is heated through, 5-7 minutes, adding more stock if needed to prevent burning.
  8. Remove from heat, discard bay leaves, stir in parsley, and serve with hot sauce or red pepper flakes.
