Traditional German Spaetzle

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon freshly ground nutmeg (optional)
  • 4 large eggs
  • 1/2 cup milk or water, plus more as needed
  • Butter, for serving

Steps

  1. In a stand mixer bowl, combine the flour, salt, and nutmeg.
  2. Whisk the eggs in a small bowl, then pour into a well in the center of the flour mixture.
  3. Add the milk, starting with slightly less than called for.
  4. Using the paddle attachment, mix the dough for about 10 minutes until bubbles form and the dough pulls into strands.
  5. Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer.
  6. Press the dough through a spaetzle maker into the simmering water.
  7. Cook for 2-3 minutes until the noodles float to the top.
  8. Remove with a slotted spoon and transfer to a colander to drain, then plunge into a bowl of ice water to firm up.
  9. Drain the noodles completely.
  10. Warm the spaetzle through in a skillet with melted butter before serving.

Notes

Can be made ahead and stored in the fridge for a couple of days; reheat in a buttered skillet or microwave.
