Traditional German Spaetzle

Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1/8 teaspoon freshly ground nutmeg (optional)
- 4 large eggs
- 1/2 cup milk or water, plus more as needed
- Butter, for serving
Steps
- In a stand mixer bowl, combine the flour, salt, and nutmeg.
- Whisk the eggs in a small bowl, then pour into a well in the center of the flour mixture.
- Add the milk, starting with slightly less than called for.
- Using the paddle attachment, mix the dough for about 10 minutes until bubbles form and the dough pulls into strands.
- Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer.
- Press the dough through a spaetzle maker into the simmering water.
- Cook for 2-3 minutes until the noodles float to the top.
- Remove with a slotted spoon and transfer to a colander to drain, then plunge into a bowl of ice water to firm up.
- Drain the noodles completely.
- Warm the spaetzle through in a skillet with melted butter before serving.
Notes
Can be made ahead and stored in the fridge for a couple of days; reheat in a buttered skillet or microwave.
