Easy Lemon Bars

Ingredients

  • 8 ounces butter, room temperature
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1¾ cups all-purpose flour
  • 6 large eggs, room temperature
  • ¾ cup lemon juice, room temperature
  • 2-3 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 2-2½ cups granulated sugar
  • â…“ cup all-purpose flour
  • Powdered sugar, for dusting

Steps

  1. Preheat oven and grease a baking pan.
  2. In a bowl, cream butter and sugar until smooth.
  3. Mix in vanilla extract and salt.
  4. Add flour and mix until a soft dough forms.
  5. Press dough evenly into the bottom of the prepared pan.
  6. Bake the crust until lightly golden, about 15-18 minutes.
  7. While the crust bakes, whisk eggs, lemon juice, lemon zest, and vanilla extract together.
  8. Whisk in sugar and flour until smooth to make the lemon filling.
  9. Pour the lemon filling over the warm baked crust.
  10. Bake again until the filling is set, about 20-22 minutes.
  11. Cool completely at room temperature, then chill if desired.
  12. Dust with powdered sugar before slicing into bars and serving.
