Easy Lemon Bars

Ingredients
- 8 ounces butter, room temperature
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 1¾ cups all-purpose flour
- 6 large eggs, room temperature
- ¾ cup lemon juice, room temperature
- 2-3 tablespoons lemon zest
- 1 teaspoon vanilla extract
- 2-2½ cups granulated sugar
- â…“ cup all-purpose flour
- Powdered sugar, for dusting
Steps
- Preheat oven and grease a baking pan.
- In a bowl, cream butter and sugar until smooth.
- Mix in vanilla extract and salt.
- Add flour and mix until a soft dough forms.
- Press dough evenly into the bottom of the prepared pan.
- Bake the crust until lightly golden, about 15-18 minutes.
- While the crust bakes, whisk eggs, lemon juice, lemon zest, and vanilla extract together.
- Whisk in sugar and flour until smooth to make the lemon filling.
- Pour the lemon filling over the warm baked crust.
- Bake again until the filling is set, about 20-22 minutes.
- Cool completely at room temperature, then chill if desired.
- Dust with powdered sugar before slicing into bars and serving.
