Fresh Apricot Crisp

Ingredients

  • 2 lbs apricots, halved and pitted
  • 1/2 tsp cinnamon powder
  • 2 tbsp honey
  • 1 tbsp cornstarch
  • 3/4 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 tsp salt
  • 1/2 tsp cinnamon powder
  • 3/4 cup oats (rolled or quick)
  • 1/4 cup grated coconut
  • 6 tbsp unsalted butter, cold and cubed

Steps

  1. Preheat oven to 350°F (180°C) with a rack in the middle.
  2. Cut each apricot half into 4 slices.
  3. Combine apricot slices in a bowl with cinnamon, honey, and cornstarch; toss until evenly coated.
  4. In a large bowl, combine flour, sugar, salt, cinnamon, oats, and coconut.
  5. Add cold cubed butter and rub into the dry mixture with your hands until crumbly with pea-sized butter bits.
  6. Transfer apricots into a baking dish.
  7. Sprinkle topping evenly over the fruit without packing it down.
  8. Bake for 45 minutes until topping is golden and apricots are bubbly.
  9. Let cool at least 15 minutes before serving.
