Fresh Apricot Crisp

Ingredients
- 2 lbs apricots, halved and pitted
- 1/2 tsp cinnamon powder
- 2 tbsp honey
- 1 tbsp cornstarch
- 3/4 cup all-purpose flour
- 1/4 cup white sugar
- 1/4 tsp salt
- 1/2 tsp cinnamon powder
- 3/4 cup oats (rolled or quick)
- 1/4 cup grated coconut
- 6 tbsp unsalted butter, cold and cubed
Steps
- Preheat oven to 350°F (180°C) with a rack in the middle.
- Cut each apricot half into 4 slices.
- Combine apricot slices in a bowl with cinnamon, honey, and cornstarch; toss until evenly coated.
- In a large bowl, combine flour, sugar, salt, cinnamon, oats, and coconut.
- Add cold cubed butter and rub into the dry mixture with your hands until crumbly with pea-sized butter bits.
- Transfer apricots into a baking dish.
- Sprinkle topping evenly over the fruit without packing it down.
- Bake for 45 minutes until topping is golden and apricots are bubbly.
- Let cool at least 15 minutes before serving.
