Fried Eggs & Vegetables (Fritada de Pimientos con Huevos)

Ingredients

  • 1/2 cup extra virgin olive oil
  • 2 yellow onions, diced
  • 6 cloves garlic, thinly sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 tsp smoked sweet paprika
  • 1/4 tsp ground cumin
  • 1 can diced tomatoes (15 oz)
  • 4 eggs
  • Salt and black pepper, to taste
  • Chopped parsley, for garnish

Steps

  1. Heat 1/4 cup olive oil in a large frying pan over medium heat.
  2. Add diced onions and sliced garlic, stirring every 1-2 minutes until lightly sautéed, about 4-5 minutes.
  3. Add diced bell peppers and cook, stirring occasionally, for about 5 minutes until softened.
  4. Stir in paprika and cumin, then add the diced tomatoes. Season with salt and pepper, mix well, and reduce to low heat to simmer.
  5. In a separate pan, heat 1/4 cup olive oil over medium heat.
  6. Fry the eggs two at a time until whites are set but yolks remain creamy. Season with salt and pepper.
  7. After the vegetables have simmered for about 10 minutes, remove from heat.
  8. Top the vegetables with the fried eggs and chopped parsley. Serve immediately.
