Easy Palmier Cookies

Ingredients
- 1 sheet ready-roll puff pastry (250-280g)
- 1 cup (200g) granulated sugar
- 2 tsp cinnamon powder
Steps
- Mix the sugar and cinnamon together in a bowl.
- Sprinkle about 1 tablespoon of the cinnamon sugar on a work surface and unfold the puff pastry on top.
- Sprinkle about 1/4 cup of the sugar mixture evenly over the pastry and gently press it in with a rolling pin.
- Flip the dough over and repeat with another 1/4 cup of sugar, pressing it in with the rolling pin.
- Fold both long sides of the dough a quarter inward toward the center, then fold again so the two sides meet in the middle, leaving a 1/4 inch gap.
- Fold one half over the other to form a log.
- Chill the log in the fridge for 15 minutes.
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Slice the log into 1/3 inch (1 cm) thick pieces.
- Toss each slice in the remaining cinnamon sugar to coat both sides.
- Place the slices cut-side up on the baking sheet, spaced apart, and slightly open each cookie's 'ears'.
- Bake for 14-15 minutes, flipping the cookies halfway through, until golden brown and caramelized.
- Transfer to a cooling rack and let cool completely before serving.
